5 Yummy Recipes for an Entertaining Derby Party

Carpe Diem.  Frosted.  Itsaknockout.

No, these aren’t the new colors in your favorite nail polish line.  These are former contenders in the Kentucky Derby, a Grade I stakes race for three year-old Thoroughbred horses, held annually in Louisville, Kentucky, on the first Saturday in May. The race is one and a quarter miles at Churchill Downs. The race is known in the United States as “The Greatest Two Minutes in Sports™” for its approximate duration, and is also called “The Run for the Roses” for the blanket of roses draped over the winner. It is the first leg of the United States Triple Crown of Thoroughbred Racing and is followed by the Preakness Stakes and Belmont Stakes.

In addition to the race itself, a number of traditions play a large role in the Derby atmosphere, including Derby parties throughout the South complete with fashionable hats, seersucker everything, and roses galore.  If you can’t make it to Churchill Downs, chances are good that you’ve got plans to host or attend a Derby party this weekend.

Derby Party Recipes

The Classic Mint Julep

  • 2 oz. Woodford Reserve Bourbon
  • 1/2 oz. simple syrup
  • 3 fresh mint leaves
  • Crushed ice

Express the essential oils in the mint and rub them inside the glass. To the same glass, add simple syrup, bourbon, and crushed ice. Stir. Garnish with more ice and fresh mint.

Derby Country Ham and Biscuits

  • Frozen tea biscuits
  • Thin slices of country ham
  • Flavored butter and mustard blends

Bake frozen tea biscuits and fill with thin slices of country ham that have been browned in a hot skillet 1 to 2 minutes on each side. Have guests dress biscuits with flavored butter and mustard blends.

Garlic Cheese Grits

  • 3 1/2 Cups Water
  • 1/2 Tsp. Salt
  • 1 cup Stone Ground Corn Grits
  • 4 Tbl. ( 1/2 stick ) butter, diced
  • 3 Large Eggs, Separated
  • 1/3 Pound Grated Aged Trappist Cheese
  • 1/2 cup Minced Fresh Garlic
  • Cayenne Pepper to taste

Preheat oven to 375F. Add salt to water and bring to a boil. Slowly stir in grits with an egg whip. Simmer, stirring frequently, until grits are soft, about 15 minutes. Add the butter and remove from burner. Add cheese, garlic, seasonings, and yolks of eggs. Allow to cool before adding stiffly beaten egg whites. Lightly fold in egg whites, and pour mixture into buttered souffle dish. Bake until golden brown and firm in the center, about 30 minutes.

Fruit Salad

  • fresh peach (sliced)
  • strawberries
  • kiwi
  • blackberries
  • blueberries
  • apple (sliced)
  • sprigs of mint for a garnish

Plan the amount of fruit you will purchase, based on the number of guests attending the Kentucky Derby party. Combine all of the fruit in a bowl and place a cover over the top of the bowl. Keep the bowl in the refrigerator until you are ready to serve to guests. Garnish with mint just before serving.

Derby Pie

For the Pastry:

  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/3 cup plus 1 tbsp shortening
  • 2-3 tbsp cold water

For the Filling:

  • 2/3 cup of sugar
  • 1/3 cup butter or margarine, melted
  • 1 cup corn syrup
  • 2 tbsp bourbon
  • 1/2 tsp salt
  • 3 eggs
  • 1 pecan halves
  • 1 cup semisweet chocolate chips
  1. In medium bowl, mix flour and 1/2 teaspoon salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl (1 to 2 teaspoons more water can be added if necessary).
  2. Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap in plastic wrap; refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
  3. Heat oven to 375°F. With floured rolling pin, roll pastry into round 2 inches larger than upside-down 9-inch glass pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side. Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with plate; flute as desired.
  4. In large bowl, beat sugar, butter, corn syrup, bourbon, 1/2 teaspoon salt and the eggs with wire whisk or hand beater. Stir in pecans and chocolate chips. Pour into pastry-lined pie plate. Cover edge of pastry with 2- to 3-inch strip of foil to prevent excessive browning.
  5. Bake 40 to 50 minutes or until set, removing foil for last 15 minutes of baking. Cool 30 minutes. Refrigerate until chilled, about 2 hours.
